High standards are driven by genuine interest in the work. Perfectionism is driven by fear of the consequences of falling short. High standards allow for curiosity and adjustment after a mistake. Perfectionism responds with self-criticism and shame. High standards allow satisfaction after completion, even briefly. Perfectionism rarely does. The mind is already on the next gap.
